Blink and you might have missed Colab cafe, popping up in the former site of Un Caffe Bar at 1 King William St whilst the foyer of the building was redeveloped. This collaborative effort was the brainchild of Michael Proud, chef and coordinator of the Lazy Susan Lunch Club and involved 3 other young guns, Greg Grigoriou, winemaker of Delinquente Wines, Dominic Ossa, manager at SAD: Cafe, and Nick Suggit, artist and owner of Dawn Patrol Coffee.

Colab provided locally roasted coffee, all-day breakfast and lunch from Monday to Friday, as well as hosted a series of wine tasting nights on Fridays. We’d like to acknowledge Anvil Capital and CBRE for taking the initiative to approach us to fill this short term space prior to redevelopment.
